The 8th iteration of the Chapter series is fantastic. A blend of 90% Cabernet and 10% Syrah, dark purple to inky red in color, this powerful wine shows seductive aromatics of blackberries, teak, dark currant, cassis, and spices. Undertones of sage and bay leaf come through with time in the glass. Rich and generous on the palate, with flavors of dark fruit and exotic spices. Bright acidity and sweet tannins linger on the finish. Try this wine with a Tomahawk Ribeye and charred Brussel sprouts. Drink now-2030.
80% new and 20% used French Oak
"To Challenge the concentration and destiny the 8 cluster yield 1ier Grand Cru Bordeaux vines ripen, French consultant Claude Gros designed this reserve pruning and harvest selection in our favorite healthy old cabernet block 1988. Our technique yields two bottles per vine, like the Grand Cru. We repeat this technique in Merlot, Cab Franc, Malbec and Syrah for blending. The Columbia Valley being warmer than Bordeaux, thinning must take place at 20 brix. We thin to balance natural sugars and acids and allow ripening for six long weeks. Hand harvested we ferment separately in small lots for 20 days building suave tannins, designed solely for this wine selection. Finished in new Le Grand and Jarnac Bordeaux puncheons, the wines age 20 months sur lees using all techniques to build full body. Using only the field selected Cuvee, we select out favorite puncheon expressions of Cabernet Sauvignon and supporting varietals for bottling less than 500 cases." Caleb Foster, Winemaker
