Our Book Club Cabernet Sauvignon from Elephant Mountain Vineyard’s 1999 block has become our favorite selection for sharing exclusively with our closest members. This wine vies annually for most powerful dark wine of the vintage. This classic Cabernet, influenced by the altitude of Elephant Mountain, is filled with dark fruit and spice. Chamomile, clove, and licorice aromas blend smoothly with the fruit and are comfortably framed in by the use of large format French puncheons.
Elephant Mountain Vineyard took full advantage of the early and hot vintage. Spring broke buds and flowered early. Canopy design and vine health was ideal as we ended spring. While summer temperatures were hotter than average with many July and August days over 100F, Andrew Schultz managed the watering of the vineyard perfectly. Verasion was early and swift, a hallmark of great vintages. Our fruit we shaded with healthy canopies balancing acidity and sugar ripeness while protecting against sunburn. By October, the vintage was record breaking in total heat units and cool picking weather was welcome.
Starting the morning of October 17 we hand harvested Cabernet Sauvignon fruit into small fermenters. We hand mixed for two weeks then finished fermentation in new and mature French oak puncheons. We aged on lees reductively developing savory tones complimentary to the powerful fruit. After 20 months, we selected the final blend. We then filtered for purity and aging stability. The blend offers Cabernet Sauvignon in a powerful style. This rich wine is enjoyable with a host of foods, especially proteins.
