Our 2016 Antagonist Sara Lee clone co-fermented with Roussanne is a fragrant, dark and concentrated delight. This wine is enjoyable now and over many years ahead. Intense aromatics of flowers, garrigue, tar, and super ripe black fruit fill this big wine with a creamy tannic finish. The round pallet is filled with flavors of flowers, blackberries, smoke, grilled steak, and sweet barrel spices. The smooth fruit profile is nearly identical on the palate as it is aromatically with sweet dark fruits taking center stage.
Winemaker Notes
"Whole cluster hand harvested Syrah was hand-sorted at the winery and destemmed into 4-ton fermenters for pump over with 10% stems returned into fermenter with whole cluster Roussanne crushed on stem. Mild temperature ferment allowed dense pallet weight to build with supple tannins to match. This clearly was the best vintage from Elephant Mountain when we finished after two weeks of skins mixing. Ferment completed in 300L puncheons where we stirred the lees for richness and savory complexity. Aged for 16 months until blending, we bottled Feb 7 while vibrant and youthful. Unfined and filtered for clarity at bottling, this wine will age for over ten years. Enjoy with a host of foods throughout the seasons." - Caleb Foster, winemaker
